I recently restrung my erhu and noticed that when I played a scale, high G on the A string (外弦)began to scream and ring as if two notes were being played at once. Does anyone know why this happens and how to prevent it?

Welcome to the forum. I assume from your question that the other notes are sounding fine. If you are getting a wolf on a particular note, you might need to adjust the felt or foam pad between the bridge and bottom. Also make sure that the bridge is centered, and the strings are in the grooves. It is easy to turn the bridge around the wrong way when you change the strings, so check the grooves. Sometimes one groove is a little larger than the other. If the A string is in a D groove, it might not be resting securely.
The strings should loop off the ends of the pegs as close to the end as possible. The space at the qianjin between the neck and strings should be about the width of an average adult thumb.
