Many people have mentioned how wood types(sandalwood, rosewood,etc) have different sound qualities... What are they?

I think too much empathy has been put on the tone of the wood. The Holly Grail is Indian Small Leaf Sandalwood which unfortunately I've yet to try and few of us can afford.
I have three erhus by three different makers so it's difficult to make a direct comparison. My teacher has for the last few decades used a brass tuner erhu which is normally considered a budget erhu but is very responsive and sounds great.
My advice now to anyone who is serious about the erhu is to get a teacher first, who may then advise you what to get. Next, buy the best you can afford and then don't buy another one.
